About twenty years ago, Michel Dupont decided, against his father's wishes, to use a portion of the Pinot Noir harvest to make an Auxey-Duresses Cuvèe Rosèe. Well, he succeeded. The fact that this wine appears on some menus of top restaurants proves that it's not a home, garden and kitchen rosèe. The wine is therefore normally hardly available for the private consumer! After the aforementioned manual harvest a short soaking of the little released juice with the skins follows in order to take on the aromas. After a light pressing, the juice is fermented in 228 litre oak barrels and another fermentation takes place in the barrel for 10 months. A very tasteful Auxey-Duresses Cuvèe Rosèe where hints of strawberry and orange mix with some liquorice. Delicious as a top aperitif or with a very refined salad. Do not serve too cold, 10 to 12 degrees is excellent.
