Description
The Chenin Blanc grapes for this Vouvray Silex Noir grow on soil with lots of black flint as the name suggests. The hand-picked grapes are very carefully selected before pressing. The wine ferments for just under three months on stainless steel and then spends about five months in a mix of large and small old oak barrels. The final golden yellow wine has aromas of pineapple, orange peel with a hint of honey and a lily in the background. On the palate, the Vouvray Silex Noir displays the minerality of the soil alongside ripe fruits like pear and apricot, a zest of citrus, some vanilla and a very long finish. The wine may be served at 8 to 10 degrees with strawberry tarts, a Tarte Tatin, with cheeses like Fourme d'Ambert or Comté and with some spicy Asian dishes. The demi-sec wine, by the way, has huge storage potential for those who would want to stay away from it. But why should you?
