Description
A Côtes du Rhône-Villages with the addition 'Sablet' refers to the village of Sablet located north of Gigondas against the western edge of Mont Ventoux. This red wine is made from Grenache (50%), Syrah (25%) and Mourvèdre (25%) grape varieties. The vines are between 10 and 50 years old in terms of age. The soil has a lot of red clay and calcareous gravel. Poor soil where the vines have to struggle to score water and bear fruit. Small yields that are completely destemmed after harvest. Vinification takes place in the blend of these grapes. Aged for a year in large oak barrels of 4000 to 6000 litres. Ruby red wine with a nose of pitch-black fruit. Firm wine with nice thick blackcurrant fruit on the palate, minerality, bay leaf, mocha, piets of bitter chocolate and fine tannins. Real food wine that may be served at 16-17 degrees! Goes well with all kinds of red meat or game and a piece of spicy Gouda cheese. Also tastes excellent with a Greek salad or a curry with red lentils.
