Pinot Noir Sauvage 2019 - Maison Joseph Cattin
The Pinot Noir Sauvage, as with all of Domaine Cattin's wines, is made from grapes that were grown organically and vegan. Two weeks of fermentation and three months of aging on stainless steel. That process ends in a dark red, leaning towards purple, wine with a substantial nose of red berries, cherry and a touch of strawberry. The taste adds pleasant tannins, some rhubarb and earthy notes. Serve at 10-12 degrees is fine. This Pinot Noir Sauvage goes very well with all kinds of dishes. A selection; grilled chicken with real fries, leek quiche, a soft pâté or an omelet with mushrooms and chives. Or of course, traditionally, with Alsatian Flammkuchen!
