Fleurie Cuvèe Tardive 2021
This Fleurie Cuvèe Tardive has a clear and transparent purple colour. In the nose, aromas of black cherries, blue plums, a hint of leather and violets. On the palate, blackcurrants, a hint of blond tobacco and a slight spiciness, accompanied by supple tannins and fresh acidity on the finish. After a rigorous and selective manual harvest, the Gamay Bunches from the Champagne and Les Déduits vineyards were destemmed for 50%, while those from Roilette were left largely intact. Without adding sulphur, the grapes are left to undergo a temperature-controlled semi-carbonic fermentation with wild yeasts on concrete cuves. After 12 days, the young wine is pressed and transferred to oak casks for malolactic fermentation and maturation. After a period of 6 months, the Fleurie Cuvèe Tardive is assembled and bottled with only a possible filtering and with the addition of a minimal amount of sulphur. To be enjoyed with meat products such as saucisson sec de Bourgogne, rosette de Bourgogne and pâté en croûte, and with filet de boeuf charolais, coq au Beaujolais, pot-au-feu and cheeses such as Comté, Gruyère, Pouligny Saint-Pierre and Valençay. Serve at a degree of 16.
