Grapes from more than 25-year-old vines go into this Côtes du Rhône Tradition. It is composed of four grape varieties; Grenache 80%, Syrah 15% and a little Carignan and Mourvédre. What makes Saint-Pierre's wines special is that Jean-François Fauque picks the best cuvées and ages them in large oak barrels for 10 to 24 months. Only when the wine starts to reach drinking age is it bottled. This Côtes du Rhône Tradition is a particularly fine and firm wine with clearly present ripe fruit. You would do well to open the bottle an hour beforehand and serve no colder or warmer than 16 to 18 degrees. This wine goes well with all kinds of red meat or game and with old-fashioned stewing steaks or other string meat (with or without red cabbage and apples). It also tastes great with just a piece of spicy cheese.
