From Cabernet Franc grapes, winemakers Jérôme Billard and Elodie Peyrussie make this Chinon Les Chiens Chiens. It's a puzzling name for a vineyard (The Dogs Chiens) but the clay soil does yield beautiful organically grown grapes. Those grapes ferment for 3 weeks and that results in a wine that matures for 14 months in oak barrels of 500 litres (of which 10% are new barrels). The Chinon Les Chiens smells beautifully of black fruit, olives and a floral fragrance with a hint of vanilla. On the palate, refined and beautifully soft, a plum, chocolate, coffee with some pepper, fine tannins and a tiny licorice. Nice aftertaste as well. Serve at a temperature of 16-18 degrees with delicious Dutch cheeses, with stuffed grilled peppers, with pasta carbonara or with grilled fine beef or game dishes.
