From Cabernet Franc grapes, winemakers Jérôme Billard and Elodie Peyrussie make this Chinon Les Chiens Chiens from the Loire region. It's a puzzling name for a vineyard (The Dogs Dogs) but the clay soil does produce beautiful organically grown grapes. Those grapes ferment for 3 weeks, producing a wine that continues to age for 14 months in 500-litre oak barrels (10% of which are new barrels). The Chinon Les Chiens Chiens smells nicely of black fruits, olives and a floral scent with a hint of vanilla. On the palate, refined and nicely soft, a plum, chocolate, coffee with some pepper, fine tannins and a tiny drop. Nice finish too. Serve at a temperature of 16-18 degrees with delicious Dutch cheeses, with stuffed grilled peppers, with pasta carbonara or with grilled beautiful beef or game dishes.
