Description
From 100% Chenin, winemakers Jérôme Billard and Elodie Peyrussie make an exceptional white Chinon Chante le Vent. The wine is named after the changing winds in the field and not the -also beautiful- chanson of the same name by Charles Trenet! From the southeastern slopes, organically grown Chenin grapes are harvested from 50-year-old vines. They are pressed quickly to preserve the spiciness. The wine ages for 4 months on stainless steel along with the skins. The Chinon Chante le Vent is particularly fruity and aromatic. A nose with intense aromas of citrus and exotic fruits. On the palate balanced, good minerality, bit of peach and nut and a nice finish. Good to enjoy as an aperitif, with fish, shrimps and shellfish, a vegetable hors-d'oeuvre, with leeks à la vinaigrette or with geeky goat's cheese. Serve at a temperature no lower than 10-12 degrees.
