Pinot Gris Sauvage 2019 - Maison Joseph Cattin
Domaine Cattin's Pinot Gris Sauvage is an organic vegan wine made from -out of course- the Pinot Gris grape. Hand harvested grapes that undergo temperature controlled fermentation on stainless steel for just under two months! Maturation continues for two months on the skins and twigs left behind. This eventually results in a beautiful golden colored wine with a fine nose of flowers, toasted and smoked notes of a nut, yellow fruit and melon with honey. The full flavor of ripe fruit like apricot completes it. Delicious fine drinking with vegetable dishes with pistou, spicy prawns, fish with curry combinations and with mild blue cheeses. Traditionally in Alsace, the Pinot Gris Sauvage belongs to the Baeckoffe. Serve at 8-10 degrees.
