Description
The vineyard where the Chardonnay grapes of Bourgogne Blanc come from is located in the commune of Saint-Vérand, in a place called "En Réforts" on a 15% steep slope and limestone soil covered with heavy clay. The Chardonnay grapes cover one hectare with two planting dates, we use the 50 acres of the oldest vine (70 years old) to produce this cuvée. The vines are pruned in Guyot with bows, the work "in the green" peeling, lifting etc ... are manual and the treatments are carried out with respect for nature. Yields are lower than allowed as we average 50 hl/ha. The Chardonnay grapes are hand-picked, transported directly to the cellar for pressing, after which the must is cooled before settling. The wine ferments for several weeks under the influence of neutral exogenous yeasts and then goes into oak barrels, 20% of which are new barrels. Bourgogne Blanc is aged for a year in our cellars and filtered before being bottled just before the next harvest. The colour is characterised by ageing, deep yellow, the nose develops woody, toasty notes, yellow fruit and the mouth is round, lush and generous. It is a meal wine that can be enjoyed at 12°C with white meats, aged cheeses.
