Description
In the Provençal dialect the Biso is the wind that blows from the north-northwest. In other words a little more north than where the Mistral comes from. The wine stands "with the feet on the ground and the nose in the air". The nose betrays quince, toast and a hint of eucalyptus (!) and the taste makes you aware of the minerals and a hint of vanilla because this Côtes du Ventoux Biso is partly raised on wood and derives a beautiful full flavor. The grapes in this wine are Clairette, Vermentino and Viognier. A wine to drink with a nice piece of grilled fish or poultry. But of course it can also be drunk 'just like that' because as Stéphane Saurel himself says: "This wine is round as a tender kiss!
