Saumur Le Clos 2017 - Château Fouquet
This Saumur Le Clos is made at Château Fouquet from manually harvested grapes. The Cabernet Franc grapes, grown organically since 1998 for 100%, and now also biodynamically, grow on clay-limestone soils. Fermentation takes 25 days in stainless steel vats and for a part 18 months in oak barrels. A complex and powerful Saumur Le Clos is the result. A little bit earthy with herbs, cedar, jammy redcurrant, a touch of vanilla, a little bit of ink, a wobble and tannins. Goes well with dishes like beetroot salad, Thai fondue and roast pork in a sauce of aromatic herbs like tarragon. Serve at 14-16 degrees.
