Saint-Pèray 2019 - Domaine Melody
Saint-Pèray is an organic white wine made from 80% Marsanne and 20% Roussanne. The field in the hamlet of Amourdedieu in Saint-Pèray is of gravelly loess soil. Manual harvest, fermentation on stainless steel and then further fermentation on oak barrels and maturation with regular batônnage on casks for 12 months. The Saint-Pèray is refined dry with just like its sister -the Crozes-Hermitage- a taste of white fruit with some honey, minerals, a little bit of licorice, a pepper and a delicious, almost fiery, long finish. Serve at 10-12 degrees with pasta with salmon, risotto with mushrooms or olives, fresh young cheeses or a cheese like Vieux Lille!
