The Domaine de Coudray is located near the town of Civray, west of Bourges.
In the 1990s, Philippe Nivet and Michel Savoie decided to partly convert the business of growing cereals and seed multiplication into a wine business. In Quincy, the vineyards gradually grew to 7 hectares, all of which was also converted to organic farming.
Winemaking is a kind of collective system. The work in the fields is done by a team of employees who can work for more winegrowers. The winemaking is done centrally with 14 other Domaine's. It allows each to benefit from modern equipment and the expertise of specialists. However, it is the winemakers themselves - presently Vincent Nivet and Julien Jansen - who remain lords and masters of their own wine in word.....!
